I already know I missed several “sometimes” plugins. One that comes to mind is a plugin for embedding video. You don’t need one, since Gutenberg has a block for it and you could always just embed an iframe even in the classic editor. But Presto Player (https://prestoplayer.com/) has some really cool features that make it my go-to for any of my sites where I embed videos.
What other plugins do you love that we didn’t cover?

Can you embed yourube in the classic and use that as a block in elementor?

I’ve heard quite a bit of debate about ‘table of contents’ plugins. What’s you guy’s thoughts on this? I have some longer posts, rank math suggests using a table of contents, I installed it and it looks OK but I’m wondering if it’s really needed or not.

As far as SEO plug-ins – how does RankMath compare with Yoast?
Caching plugin. I prefer Litespeed but that’s on a case by case basis. However, Autoptimize or WP Rocket are good options.
